St. Louis Mo. Lagers are often served bright and clear, without the yeast used to ferment them, giving them a clean, malty finish. Rather than filter out the yeast, however, this lager keeps a cloudy, golden-colored hue with just the right hop dosing. This rare style dates back to the Middle Ages, where the beer was matured in deep vaults and emerged smooth and rich in vitamins. It's like an unfiltered lager—sort of like a fresher, hoppier hefe.
