LAMB AND SPINACH STEW
Tender, lean morsels of lamb sirloin cooked in a mixture of chopped spinach, onions, garlic, herbs and spices. Finished with a dash of lemon juice for a bright note. Garnished with pine nuts and served with a side of Basmati rice and salad.
LAMB AND RICE DOLAAS
Traditionally this dish is made with the lamb's rib (Dolaa). However, we prefer the shoulder part for its leaner cut and more delicious flavor. We braise the shoulder in a mixture of 9 different spices then cook the rice in the lamb broth. The dish is then garnished with fried pinenuts and almonds and served with a fresh salad and a side of cucumber-yogurt sauce. Incredibly rich!

Lean ground organic beef mixed with our blend of spices, finely chopped onion and parsley, layered in our oven dish with sliced, seasoned potatoes and baked in a creamy and tangy "tajen" sauce. Served over Basmati rice with a side of Lebanese salad.
CHICKEN AND CAULIFLOWER KABSEH
This wonderful Arabian Gulf dish borrows from the culinary traditions of the Indian subcontinent to create a blend of flavors uniquely Middle Eastern. Seasoned morsels of chicken, braised in a rich broth of tomatoes, onions and fragrant spices until very tender. The broth is then used to cook the rice and cauliflower. MUSAKHAN
This dish originated in the Jordanian-Palestinian region and had been adopted, with slight variations, all over the Middle East with great success. Our recipe uses traditional flat, thin bread, which is stuffed with a mixture of golden fried onions, chicken morsels, herbs and spices with lots of olive oil. The folded bread purse is baked and served with a side of crunchy salad and a garlic dip.
