Sauvignon Blanc VQA - Cave Springs, Beamsville Bench, Ontario, 2011

Varietal traits of lemon grass and gooseberry are at the fore on the nose, with notes of pink citrus, spice and a touch of musk in behind. The palate is dry and medium in weight with plenty of crisp acidity woven into the wine’s plush textures. Intense flavours of gooseberry and freshly cut grass predominate overtop nuances of ripe ruby grapefruit.

Quarry Road Gewurztraminer VQA – Tawse Winery, Vinemount Ridge, Niagara, On

The 2012 vintage was an early harvest, with exceptional ripeness. As a result expect ripe lychee, lilac and ginger on the nose with delicious fruit and minerality of the vineyard. This wine also has the characteristic Gewurztraminer spiciness that is evident throughout the tasting experience and finish.

Riesling VQA - Tawse Winery, Vinemount Ridge, Niagara, Ontario 2011

The wine is slightly off dry, with ripe lemon and grapefruit and hints of tropical fruit, with notes of contrasting minerality. Expect a long finish on this wine.

Chardonnay VQA – Tawse Winery, Vinemount Ridge, Niagara, Ontario 2011

This wine has been aged in French oak barrels. The wood has imparted savory characteristics of toast and smoke. The expressive note has ripe apples, pungent citrus notes as well minerality. On the palate you will find hints of ripe McIntosh apples and lemon zest with balanced acidity.

Pinot Noir “Quarry Road Vineyard” VQA - Tawse Winery, Vinemount Ridge

Niagara, Ontario 2009. The nose is a bit shy showing a distinct earthiness with floral notes and hints of cherry in the background. On the palate, the wine has good balance and complexity with mineral notes of limestone, mushrooms, violets and dark cherries.

Petite Verdot VQA - Stratus, Niagara on the Lake, Ontario 2008

This wine has been aged in new French oak. Has had malolactic fermentation to soften the harsh acidity and soften the mouth feel. Fruit was harvested from older blocks of Petit Verdot and only yielding 1.3 tons per acre. You will find the typical varietal characteristics of, prevalent tannins, “Jammy” berries and spices.

Baco Noir, Reserve VQA - Henry of Pelham, Niagara Peninsula, Ontario, 2011

Deep ruby red colour with hints of purple; ripe blackberry and plum aromas with espresso, spice and game as a result of being exposed to American oak. Dry, full-bodied; black cherry flavour, well balanced with a long smokey finish.

Cabernet Franc “Growers Blend”, VQA - Tawse, Vinemount Ridge, Niagara, ON

Aged in French oak for 14 months, this wine displays bright acidity, smooth tannins and notes of dark berries, dried herbs and cedar. It is deep in colour, intense nose and great structure makes this a wine suburb Cabernet Franc.

Tasting Note: This Scotch is fruity and full bodied, with honeycomb, Christmas cake, orange peel and sweet malt. Expect a big, mouth-filling texture, a sweet taste, and a tannic finish.

Lagavulin 16 year old

Tasting note: This style of Scotch is rich, sweet and very smoky. This mature whiskey is highly complex, with berries, sweet seaweed, linseed oil, wax polish, camphor, carbolic, and scented smoke. Expect a big mouth- feel, sweet taste to start, with scented smoke in the finish and long after taste.

A light pilsner that is produced using only four natural ingredients: pure spring water, malted barley, hops and yeast. The flavour is herbaceous and refreshing. Cheers.

Lake of Bays Crosswind Pale Ale

The aromatics are primarily citrus and range between lemon and grapefruit. There are also hints of caramel, toasted grains and a touch of fresh apple. The flavours include toasted bread and a slight note of toffee and stewed apple. The mouth feel is quite dry and the finish is quick with some mild, lingering bitterness.
