Sauvignon Blanc VQA - Cave Springs, Beamsville Bench, Ontario, 2011
Varietal traits of lemon grass and gooseberry are at the fore on the nose, with notes of pink citrus, spice and a touch of musk in behind. The palate is dry and medium in weight with plenty of crisp acidity woven into the wine’s plush textures. Intense flavours of gooseberry and freshly cut grass predominate overtop nuances of ripe ruby grapefruit.
The 2012 vintage was an early harvest, with exceptional ripeness. As a result expect ripe lychee, lilac and ginger on the nose with delicious fruit and minerality of the vineyard. This wine also has the characteristic Gewurztraminer spiciness that is evident throughout the tasting experience and finish.
The wine is slightly off dry, with ripe lemon and grapefruit and hints of tropical fruit, with notes of contrasting minerality. Expect a long finish on this wine.
This wine has been aged in French oak barrels. The wood has imparted savory characteristics of toast and smoke. The expressive note has ripe apples, pungent citrus notes as well minerality. On the palate you will find hints of ripe McIntosh apples and lemon zest with balanced acidity.
Niagara, Ontario 2009. The nose is a bit shy showing a distinct earthiness with floral notes and hints of cherry in the background. On the palate, the wine has good balance and complexity with mineral notes of limestone, mushrooms, violets and dark cherries.

Petite Verdot VQA - Stratus, Niagara on the Lake, Ontario 2008
This wine has been aged in new French oak. Has had malolactic fermentation to soften the harsh acidity and soften the mouth feel. Fruit was harvested from older blocks of Petit Verdot and only yielding 1.3 tons per acre. You will find the typical varietal characteristics of, prevalent tannins, “Jammy” berries and spices.

The aromatics are primarily citrus and range between lemon and grapefruit. There are also hints of caramel, toasted grains and a touch of fresh apple.
